Our vegetarian meal with sweet potatoes, red lentils and rosemary is carefully prepared on a vegetarian base of red lentils and white quinoa. We have then sautéed yellow onions and bell peppers in cold-pressed olive oil and combined them with our vegetarian base, to which we then added sweet potatoes, dried apricots for their natural iron content, a sprinkle of home-made vegetable stock and a little lemon juice. Finally, we spiced the meal with a hint of rosemary.
